JAPANESE STYLE SWEET DOUGH




Hmmmm.... lama rasanya tak keluar rumah beli barang dapur.Roti pun ilek!! So.. apalagi... proses menguli pun start. Kang ada lak yang memekak - "Apa nak makan ni ibu???" After browsing all the breads and buns recipes, decided to try this 2 recipes... What???? 2?????.... Iyeeeee.. Apa? Tak percaya ke?? Like I said, mood ni kalu datang menggila... Tapi tak le datang like blogger yang hebat2 belaka tu...

1st bun... I used Japenese soft bun... Filling I put parmesan cheese + sugar.. The recipe used water roux.
Lupa pulak siapa yang empunya resipi. Rasa ramai dah buat. Thanx to all the blogger. 

p.s: Bila Ju nak update entry ni, terlupa lak lagi satu buat pakai which recipe... hehe. So Ju tepek JSSD ni je la ek. Smiley


WATER ROUX

25 gm bread flour
125 gm water.
Into the pan. Masak atas api sederhana til, pekat.

As usual my bread maker do the works. Dump all the ingridients in BM in order:

Bahan-bahan:

150 ml water
2 egg yolks

75 gm sugar
1 tsp salt

1/2 tsp bread improver
water roux (25 gm bread flour + 125 gm water) see above
375 gm bread flour
100 gm plain flour
35 gm milk powder
1 packet instant yeast
50 gm butter

Method:


  1. Dump all in BM. It takes 1 1/2 hours.
  2. Take out. Make a ball 45 gm each. Let 10 minutes. Cover with kitchen towel.
  3. Make a bowl again. Arrange in a pan. Brush with egg wash. I sprinkle top with grated parmesan cheese and sugar.
  4. Bake at 180' c for 20 minutes.
